    Osaka-style dressing on robata-grilled focaccia

  • Tiradito

    thin slices of the catch of the day with the dressing we learned in Lima and a touch of arbequina olive oil

    free-range eggs with black potatoes, katsuobushi, okonomi sauce and Japanese mayonnaise

    pickled in dashi, with basil and top-quality olive oil

    warmed in a chargrilled banana leaf with yellow ají and coconut leche de tigre
